Apple Crumb Cake

We enjoy a classic crumb cake, but a New York-style crumb cake will always be our first choice. Try this wonderfully delicious and impressive crowd-pleaser this holiday season.

APPLE CRISP CRUMB TOPPING:

Ingredients:

1/3 cup (4/5 dl) sugar
1/3 cup (4/5 dl) dark brown sugar
3/4 tsp ground cinnamon
1/8 tsp table salt
8 tbsp unsalted butter (1 stick), melted and still warm
1 3/4 cups (4dl) cake flour (7 ounces)
1 fuji apple diced
2 teaspoons cinnamon
3/4 cup (1 4/5 dl) regular oats
1/2 cup (1dl) your choice of nuts (optional)

CAKE:

Ingredients:

1 1/4 cups (3dl) cake flour
1/2 cup (1dl) granulated sugar
1/4 tsp baking soda
1/4 tsp table salt
6 tbsp unsalted butter 3/4 stick, cut into small pieces, softened
1 large egg
2 tbsp canola oil
2 tsp pure vanilla extract
1/2 cup (1dl) milk
1 1/2 tsp cinnamon
2 tbsp brown sugar

Instructions:

APPLE CRISP CRUMB TOPPING:

  1. Whisk together sugar, dark brown sugar, cinnamon, salt and butter into a bowl.
  2. Add in flour until combined. Set the topping dough aside.
  3. In a second bowl stir together the nuts, cinnamon, apples and oats.
  4. Let both bowls sit until you are done making the cake.

CRUMB CAKE:

  1. Preheat oven to 325 degrees.
  2. In a bowl, sift together flour, sugar, baking soda, and salt.
  3. Add butter in pieces.
  4. Mix the ingredients with a hand blender until you no longer see the butter and the mixture looks like a crumble.
  5. Add in your remaining cake ingredients, egg, vanilla, milk, apple, cinnamon and brown sugar.
  6. Mix until light and fluffy, about 2 minutes.
  7. Pour the cake batter into a greased baking pan.
  8. Break apart the topping dough you made earlier into smallchunks and sprinkle over the dough.
  9. Spoon over the apple, nuts and oat mixture topping over the crumbles.
  10. Bake for 40-55 minutes, or until a cake tester comes out clean.
