Three Egg-septionally Easy Easter Dishes

So, you got your creative juices flowing with the kids, or adults, and painted/dyed egg-stravagent eggs this Easter. But what do you do with gazillion eggs in your home? Eat them! Here are three egg-squisite dishes for you to enjoy courtesy of the Food Network, but with our twist.

Egg and Spinach Salad with Goat Cheese Dressing

Ingredients:
1 small red onion
3 ounces soft goat cheese
1/4 cup buttermilk
2 tbsp cider vinegar
1 tbsp extra-virgin olive oil
1 tbsp horseradish, drained
2 tsps dijon mustard
Salt and freshly ground pepper
1-pound potatoes, sliced
4 hard-boiled eggs, sliced
8 ounces green beans, trimmed
8 cups spinach, torn
1 large ripe tomato, halved and thinly sliced

Instructions:

1. Thinly slice half the onion; soak in cold water.
2. Mince the remaining onion half.
3. Process the minced onion with the goat cheese, buttermilk, vinegar, olive oil, horseradish, mustard, 1/4 teaspoon salt, and pepper to taste in a blender until smooth. Add 1 tablespoon water if needed.
4. Add the potatoes to a pot of salted water; bring to a simmer and cook until tender, about 18 minutes. Drain and pat dry.
5. Bring another pot of water to boil and add the green beans to it; cook until crisp-tender, about 3 minutes.
6. Drain, run under cold water and pat dry.
7. Drain the red onion slices.
8. Toss the onion slices in a bowl with the spinach, green beans and half of the dressing.
9. Top with the potatoes, tomato and hard-boiled egg slices.
10. Drizzle with the remaining dressing.

Chunky Egg and Turkey Salad Sandwich

Ingredients:
1/2 medium red onion, chopped
12 hard-boiled large eggs
1 stalk celery (with leaves), chopped
1/2 cup mayonnaise
2oz shredded turkey breast
2 tbsps chopped fresh dill
2 tbsps dijon mustard
1 yellow bell pepper, sliced
1 tbsps plus 1 teaspoon freshly squeezed lemon juice
2 tsps salt
Freshly ground black pepper

Instructions:

1. In a large bowl, mix together the onion, celery, mayonnaise, dill, mustard, lemon juice, and salt.
2. Add the eggs to the mayonnaise mixture and gently mix them together.
3. Season with pepper to taste.
4. Build your sandwich with lettuce, tomatoes and yellow bell peppers, turkey and the egg salad.

Broccolini With Hard-Boiled Eggs and Feta Cheese

Ingredients:
2 broccolini bunches
2 tbsps white wine vinegar
2 tbsps mustard
3 tbsps olive oil
1 small shallot, minced
A pinch of salt
A pinch of pepper
1 hard-boiled egg, chopped
3 tbsp feta cheese, shredded

Instructions:

1. Trim the tough ends off 2 broccolini bunches.
2. Boil in salted water until crisp-tender for about 4 minutes.
3. Drain, shock in ice water and pat dry.
4. Whisk mustard, white wine vinegar, olive oil, shallot, and salt and pepper.
5. Drizzle over the broccolini and top with chopped feta cheese and hard-boiled egg.
