Markiz's Oat Rice Salad with Grilled Greens and a Taste of Ras el Hanut

Looking to whip up a quick, healthy and simple meal? We asked TV chef Markiz, who loves sharing inspirational meals for the family, to share one with us. She created this wonderful dish that you can wow your family with. Try it this weekend, fall in love with it and add it to your go-to dinner list.

Ingredients for four servings
Ingredients:
1.7 cup (4 dl) oat rice
4 scallions
2 bell peppers
1 zucchini
3 tbsps olive oil
1 bundle of radishes
4 handfuls of baby spinach
0,42 cup (1 dl) walnuts

Dressing:
3 tbsps olive oil
1 tbsp vinegar
2 tsps Ras el Hanut (or 1 tsp cumin and 1sp paprika)
0,42 cup (1 dl) sour cream
1 bundle of chives
½ tbsp lemon juice

Instructions:
Pre-heat the oven at 392℉ (200℃)
Boil the oat rice according to the instructions on the package.
Dice the scallion and mix it with the rice. Add salt and pepper to taste.
Cut the bell peppers into smaller pieces.
Core the zucchini and cut into smaller pieces.
Place the vegetables on an oven tray lined with baking sheet.
Drizzle olive oil and add salt and pepper before tossing the vegetables.
Spread them on the tray and roast them in the oven for 15 minutes or until the vegetables get a nice color.

Dressing:
Dice the chive and whisk it with the remaining ingredients for the dressing.
Cube the radishes in four.
Dish the rice on the place and top off with the grilled vegetables, radishes, baby spinach and walnuts.
Drizzle the dressing over the dish, and serve!
